My Lovely Lemon Rubies were the first things to come out of our new oven! It’s true, I baked cookies before I baked a cake, but they’re my own special recipe–the base of which begins as a cake mix, which gives them a wonderfully soft, melt-in-your-mouth texture. The centers of the lemon cookies are filled with seedless strawberry jam–making for delicious summertime snacking!
